I’m really sick of all the holiday leftovers, so on New Year’s Day I started looking for something different to fix for supper.
I wanted quick, easy-to-fix recipes, that I could make for two people. With just my husband and me at home now, cooking a big meal doesn’t make a whole lot of sense because the leftovers generally just go to the dogs (literally).
Since our work schedules mean most days we’re not home at the same time, I need recipes that can be warmed up in the microwave and still taste good. All Rick wants to eat these days is something taco, which I’m not crazy about but will eat sometimes. So I started my recipe search at my favorite place - kraftfoods.com.
I knew they would probably have tons of recipes that had something to do with tacos in some way, and sure enough I hit the jackpot!
I found several recipes that had taco seasoning in the recipe, along with other ingredients you might use in making tacos. But the one I chose to make first is called the Easy Layered Taco Mac & Cheese.
Now I love me some Kraft Macaroni and Cheese, and I will fix it for myself for supper a lot of times, nothing else, just Kraft Mac and Cheese.
I was a little leary about Rick liking it, because he’s generally not fond of mac and cheese, but as it turned out I was worrying for nothing. He loved it.
“This stuff is delicious. What do you call it?” he asked as he was spooning his second helping.
I told him it was a recipe from Kraft that I found on the internet, called Easy Layered Taco Mac and Cheese, and he said “Well, you did good!”
Since Kraft Food has given me permission to reprint their recipes in my column, I wanted to definitely share this one with you. However, I added my own twist to the recipe, by sprinkling some Kraft Finely Shredded Mexican Cheese Blend Cheddar/Monterey Jack on top of each layer. But you don’t have too.
The recipe is so easy to fix and so delicious I’m sure it will be a hit with your family.
EASY LAYERED TACO BAKE
What You Need
1 pkg. (7-1/4 oz.) KRAFT Macaroni & Cheese Dinner
1 lb. ground beef
1 pkg. (1.25 oz.) TACO BELL HOME ORIGINALS® Taco Seasoning Mix
1 cup TACO BELL HOME ORIGINALS Thick 'N Chunky Mild Salsa
HEAT oven to 400ºF.
PREPARE Dinner as directed on package. Cook meat with taco seasoning as directed on package.
LAYER seasoned meat, macaroni and cheese and salsa in 8-inch square baking dish.
Optional: Add KRAFT Finely Shredded Mexican Cheese Blend Cheddar/Monterey Jack on top of the salsa before adding the next layer.
BAKE 20 min.
