Even though I still find myself easing the cabinet doors open or sticking my head around the door and peering behind the toilet before I take a step into my bathroom,  at least the uninvited visitor I wrote about in my last column hasn’t paid me a return visit.

Although things have been pretty busy over the past few days — what with the government shutting down (I know many of you are very concerned about that) and Tropical Storm Karen making her way toward us earlier this week — I still managed to find time to search for a few new recipes (15 to be exact).

I haven’t been able to try all of them yet, but I decided to share the one I did get a chance to try earlier this week. Now I love a good sloppy joe and have fixed many over the years, and even though I’m not big fan of Mexican food, I like tacos occasionally. Well, this week I found a recipe that combines the two together.

I was surfing my favorite website,, and discovered the recipe for “Sloppy Tacos.”

Hmmm. That sounded promising, especially since I already had all the ingredients that was needed to make them.

So that’s exactly what I had for supper that very night, and have since declared “Sloppy Tacos” to be “one” of the most awesome tasting sandwiches I’ve tried lately. It was so easy to fix and tasted so good, I ended up scarfing three of them down before I even realized what I had done.

And before you even think about asking such a silly question, “NO!!! It Does Not!” and I repeat, “Does Not!” even come close to being compared to that awesome double-decker BLT that I had at the little cafe in French Camp, Miss.

The “Sloppy Tacos” are delicious, but nothing will ever compare with that wonderfully fabulous sandwich!

So now that we got that out of the way, here’s the latest recipe I’ve added to my repertoire, and I hope it becomes one of your favorites too!.

For those of you attempting to eat more healthy (to which I applaud), I have included information on the healthy variation of this recipe as well as the nutritional information per serving.

Sloppy Tacos

Prep time: 5 min.; total time: 20 min. Total servings: 8

What You Need

1 lb. ground beef

1 jar (16 oz.) TACO BELL Thick & Chunky Medium Salsa

1 pkg. (12 oz.) hamburger buns (8 buns)

1 pkg. (6 oz.) KRAFT Singles

BROWN meat in large skillet; drain.

STIR in salsa; cook until heated through, stirring occasionally.

FILL buns with meat mixture and Singles.


Top meat mixture with chopped tomatoes, chopped onions and BREAKSTONE'S or KNUDSEN Sour Cream before covering with tops of buns.


Substitute 8 flour tortillas for the hamburger buns. Spoon meat mixture down centers of tortillas; top with Singles. Roll up.


Save 40 calories and 5 grams of fat per serving by preparing with lean ground beef and KRAFT 2% Milk Singles.
