In December, it was cheese fondue with fresh veggies and French bread, chicken and beef with special sauces and chocolate fondue with fresh fruit and angel food cake.
This week, it is French onion soup, chicken kiev, Italian green beans and mascarpone with raspberry and pineapple.
The menu and meal for the monthly cooking class is prepared by Marie Dickerson, who participated in a supper club while living in Tuscaloosa and organized a similar group after moving to New Mexico.
Seniors pay $5 per person for the class, which includes a cooking demonstration and recipes for the food prepared as well as samples.
Dickerson’s task is to present relatively easy dishes that also expand the group’s culinary horizons.
For example, the mascarpone that she will be serving on Wednesday uses phyllo dough, an ingredient unfamiliar to most of the seniors until Dickerson used it in baklava and apple strudel several months ago.
“A lot of people don’t like to make crusts, so I’m showing them how they can do something that’s not so hard,” Dickerson said.
Another dish that Dickerson recently introduced to the seniors is a lettuce wrap, which substitutes lettuce for the more traditional tortilla shell.
“I’m showing them how you can use the same stuff and use a little different spices to mix it up and make it taste better,” she said.
The class is scheduled for the first Wednesday of each month but was pushed back this month due to the New Year’s holiday.
The next class will be held Wednesday from 11:30 a.m. to 1 p.m. at the Jasper Senior Center, which is located at 800 14th Avenue West across from Swann’s Gym.
Because space is limited, registration is required the Monday before the class.
